At the moment I just plot the pxxc confidence interval array obtained when calling it in the pwelch function, and its looks very confusing (a lot of noise!). If I well understood the ratio U/L is constant, therefore the logarithm of the confidence interval has constant difference and depends only on M (the range of frequencies). The example given in the script header did not work with the script as given because it involves an if statement comparing the variable "method" (sometimes a cell array, sometimes an integer) to the value "1". I modified the if statement to check whether "method" is a cell array first, and now the script works as intended.
