Shared hosts are often storing log files in your root directory /log subfolder. I also checked the PHP.ini using phpinfo() . The only ini loaded is the one I adjusted in /etc/php.ini and the user and group it is using is apache - User/Group apache(48)/48 . What am I missing? I thought this was for error display onscreen but it is for error logging as well it seems. Will add this as final solution unless someone can explain this better. In that case I will be more than happy to mark that answer as the solution

And the logs for PHP (if any) are set in the php.ini file. For the case of PHP, you have to look at the php.ini file, and look for log_errors and error_log variables, that must have these values: log_errors = On error_log = /tmp/php_error.log the last value (/tmp/php_error.log) is just an example. It must be a path to a secure location where you want to store the logs.
