It is usually done as a preemptive measure to avoid further damage (like file system corruption) to the system. Each kernel panic is associated with cause for the panic and the stack dump of the thread that was running when the panic happened. Stack dump consists of offset within the function that points to an instruction that was running when panic was hit. It is quite simple in most cases (except memory corruption) to debug panics.
