If you just run the domain joining wizard (usually the renaming computer name mac button under rename) it will allow you to rename the computer while joining the domain. Renaming Computer In Active Directory
trying to rename a Windows Server 2012 server. I know there is a issue with 2000 workstations in a NT 4.0 domain. The workaround was to remove the workstation from the domain, reboot and change the name of the computer and add it to the domain again. Dunno if this works with 2003 R2.
